Mini Fruit Pies with #Krusteaz Meyer Lemon Cookies! #Recipe

September 22, 2015 By Africa

Mini Fruit Pies made with Krusteaz Meyer Lemon Cookie Mix

I received an assortment of Krusteaz Cookie Mixes – their new Bakery Style Cookie Mixes and immediately set out to create a fun snack, perfect for after school OR just about anytime!!  I came up with;

Mini Fruit Pies, made with Krusteaz’s Meyer Lemon Cookies.

The process couldn’t be easier.  I followed the directions on the Krusteaz Meyer Lemon cookies to bake up a batch of delicious lemon cookies.  The cookie dough made roughly 18 cookies, give or take a couple I ate once they were made.

To create the Mini Fruit Pies I did the following;

Ingredients:

  • 1 Krusteaz Meyer Lemon Cookie Mix
  • 1 package cream cheese (softened)
  • 1/4 C sugar
  • 1/2 tsp vanilla
  • Assorted fresh fruit (strawberries, blueberries, raspberries, or other fruit your family enjoys)

Directions:

  1. Ensure the cream cheese has been softened, this will make step #2 easier.
  2. Combine the cream cheese, sugar, and vanilla in a blender and mix until smooth.
  3. Using a butter knife apply the cream cheese mixture to the cookies.
  4. Place the assorted fresh fruit onto each cookie.

This is a great activity to do with your children, they’ll have a blast decorating their own fruit pies.
