Roasted Tomatillo and Garlic Salsa Recipe

When my friends came over recently we whipped up a couple meals, one of which was Chipotle Enchilada Tofu Tacos served with Cilantro Cream AND Roasted Tomatillo and Garlic Salsa (with onion).  I am excited to share this recipe with you today;

Roasted Tomatillo and Garlic Salsa (with onion)

Ingredients:

  • 1 onion, cut into chunks

NOTE: You are able to prepare the ingredients in your oven’s broiler OR you can put them all on a cookie sheet (as shown above) and grill them on your outdoor grill, which is how we prepared our ingredients.

Directions: 

  1. BROILER METHOD:  Preheat the oven’s broiler to 350 degrees.    Arrange the garlic, tomatillos, onion, and jalapenos on a baking sheet.    Place under the broiler, and cook for a few minutes. Remove garlic cloves as soon as they are toasted.    Continue to roast jalapenos and tomatillos until they are charred, make sure to turn occasionally.   Once roasted set aside to cool. (NOTE: the charred parts of the tomatillos and the peppers will add a really nice flavor to the end product.)
  2. GRILL METHOD:  Place ingredients on a baking sheet.  Place baking sheet onto preheated grill.  Follow same directions for broiling.   This method should take roughly 15 minutes.  
  3. Place onion, peppers and tomatillos in a blender with the garlic and cilantro. If needed you can add a little water to the mixture.  Season with salt and pepper to taste.   Refrigerate until serving.
