Chipotle Enchilada Tofu Tacos with Cilantro Cream using Nasoya TofuBaked

Spicy enchilado tacos made with Nasoya Tofubaked – Chipotle Flavor

Served with cilantro cream!

When my friends were over last week we made a couple tofu based meals. The first was a Teriyaki Tofu Stir-Fry and then we made these Chipotle Enchilda Tofu Tacos. Both of these meals were made with Nasoya Tofubaked produccts.

Ingredients:

Spicy Chipotle Enchilada Tofu Tacos

  • 2 packages Nasoya Chipotle TofuBaked (each Nasoya Tofubaked package is 8oz)
  • 1 cup vegetable broth
  • 6 tablespoons tomato paste
  • 1-2 tablespoons chili powder (depending on how spicy prefer it)
  • 1 teaspoon dried oregano
  • 1 teaspoon cane sugar
  • 1 1/2 teaspoons ground cumin
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 1/8 teaspoon sea salt
  • 1/2 red onion
  • 8 small corn tortillas or lettuce leaves to make lettuce wraps

Cilantro Cream

  • 1 tablespoon fresh lime juice
  • 1/2 cup cilantro
  • 3/4 cup sour cream
  • 1/4 teaspoon sea salt

Directions – Tacos

  1. Open each package of Nasoya Chipotle Tofubaked and crumble.
  2. Combine the tomato paste, spices and sugar in a blender and blend until completely smooth – adjust spices to your liking.
  3. Heat the oil in a skillet on medium. Add the garlic and cook for 30 seconds, then add the onion and salt and cook for 3-5 minutes, until soft.  Add in your crumbled Nasoya Chipotle Tofubaked and cook, stir frequently, for roughly 10 minutes. The tofu should be just lightly brown. Pour in the sauce and cook for another 6-7 minutes, until  you can see the tofu has absorbed most of the sauce.
  4. Divide the tofu filling between the 8 tortillas, and top each taco with cilantro cream, roasted tomatillo & garlic salsa.  
  5. Add other fillings; lettuce, tomatoes, feta, etc.

Directions – Cilantro Cream

  1. Place all cilantro cream ingredients into a blender and blend until smooth.
  2. Cilantro cream to be served either on the side (as pictured) or spooned onto taco (roughly 1 to 1.5 tbls)

    This looks soo good and the cilantro cream, too. I love tofu and would like to try this! It would entice ppl who think they wouldn’t like tofu, also!

    This looks amazing! I’m a vegan so I wonder if the cilantro cream would taste good if made with a vegan sour cream! Yum!

    I tasted plain tofu once and wasn’t fond of it. That being said, I can’t rate this recipe with an open mind. I have heard that tofu absorbs other flavors, so I may give this a try.
